National Swedish Fish Day!

Can you believe it?!

A whole day to celebrate the gummy red fish candy!

A couple months ago my soon to be son-in-law and my daughter were watching a movie and eating Swedish Fish and Seth said, “You should make a Swedish Fish Cupcake!”

First of all, I thought GROSS! …not my fav!

but I kept seeing Swedish Fish on Facebook and Twitter and realized just how much people Luv, Luv, Luv this funnly little candy.

So I became determined to make a yummy Swedish Fish Cupcake!

I call this Fabulous Cupcake: One Fish, Two Fish, Red Fish Blue Fish

Oh yes, a Dr. Suess Cupcake:

It’s a Strawberry/Raspberry Cupcake infused with bits of Swedish Fish, filled with Marshmallow Creme, and topped with a Blue Vanilla Buttercream and a Swedish Fish!

This is just FUN in a CUPCAKE!

…for kids of ALL ages!

It’s National Chocolate Cake Day


January 27th is National Chocolate Cake Day!

For a chocoholic this day is heaven! I mean moist chocolate cake!

Yes, Thank you!

…not the cake you pick up at the super-center bakery …but a decadent treat made with chocolate love!

…not the kind that comes from a box …but a fab recipe that SCREAMS: CHOCOLATE!

Hershey’s has an easy recipe for the perfect chocolate cake …that you just gotta try!

Perfectly Chocolate Chocolate Cake

  • 2 cups sugar
  • 1-3/4 cups all-purpose flour
  • 3/4 cup HERSHEY’S Cocoa
  • 1-1/2 teaspoons baking powder
  • 1-1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 eggs
  • 1 cup milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  1. Heat oven to 350°F. Grease and flour two 9-inch round baking pans.
  2. Stir together sugar, flour, cocoa, baking powder, baking soda and salt in large bowl. Add eggs, milk, oil and vanilla; beat on medium speed of mixer 2 minutes. Stir in boiling water (batter will be thin). Pour batter into prepared pans.
  3. Bake 30 to 35 minutes or until wooden pick inserted in center comes out clean. Cool 10 minutes; remove from pans to wire racks. Cool completely. 10 to 12 servings.

Perfectly Chocolate Chocolate Frosting

  • 1/2 cup (1 stick) butter or margarine
  • 2/3 cup HERSHEY’S Cocoa
  • 3 cups powdered sugar
  • 1/3 cup milk
  • 1 teaspoon vanilla extractMelt butter. Stir in cocoa. Alternately add powdered sugar and milk, beating to spreading consistency. Add small amount additional milk, if needed. Stir in vanilla. About 2 cups frosting.

Happy Hour ~ Starbucks Frappuccino® Starts Today


Ok …here’s something that excites me!  CAFFEINE in the Afternoon!

Yes, I’m a COFFEE GIRL for sure.

…and then I come across an ad for Starbucks and Happy Hour!

Between May 7 and May 16, enjoy a half-price Frappuccino® blended beverage at participating Starbucks in the afternoon – 3 to 5 p.m., to be exact.

So when the time-clock strikes 4:30 PM…I’ll be jetting and you know where you’ll find me this afternoon!

Let’s Celebrate ~ It’s National Peach Cobbler Day

Today is National Peach Cobbler Day

…and yes, I make the best peach cobbler on the planet. Yes, I do. I am not afraid to say it! It’s full of butter and calories…so it’s not one of those thing I would serve every day…but it’s a treat for special occasion.  

…and what a better special occasion than National Peach Cobbler Day?! 

It’s so easy…served warm and topped with some vanilla bean ice cream…Well, you try it and tell me if it’s not the best you’ve ever tasted! 

 

 

PEACH COBBLER: 

1 Cup Flour 

1 Cup Sugar 

2 tsp Baking Powder 

½ tsp Salt 

1 tsp Vanilla 

¾ Cup Milk 

1 Stick Butter (Melted) 

1 16 oz Can Sliced Peaches 

Cinnamon 

Combine flour, sugar, baking powder, salt, and vanilla in bowl. Add milk and butter; mix well. Pour into 8×8 baking dish. Spoon peaches with juice over batter. Sprinkle with cinnamon. Bake at 400 degrees for 30 minutes or until lightly golden brown. 

Serve warm.

Sunday Sweets ~ Banana Chocolate Chip Bars


A couple of over-ripe bananas…and it’s Sunday Sweet time for sure.

One of my family’s fav’s is banana chocolate chip bars. Super easy to make and perfect when I’ve bought too many bananas this week. With a few staple pantry ingredients I can throw together a fabulous treat.

This is my mom’s recipe. I still use the recipe card that I wrote the recipe on in green ink when I was a little girl and by now…it has plenty of batter splatters on it.

 

Banana Chocolate Chip Bars:

In small bowl mix together:

            2 cups Flour

            2 tsp Baking Powder

            ½ tsp Salt

 In larger bowl cream:

            2/3 cup Shortening (I used butter flavored Crisco for better flavor)

            2/3 cup Sugar

            2/3 cup firmly packed Brown Sugar

 Beat in:

      1 tsp pure Vanilla

            1 Egg

            1 cup mashed Banana

            1 cup Chocolate Chips (I use mini-chips)

 Mix  wet and dry ingredients.

Grease your baking pan. My mom makes these in a jellyroll pan and bakes for 20 minutes.

My family likes them a thick and chewy so I use a 13×9 baking pan and bake for 30 minutes. Cool and Enjoy!
